Honey Sweetened Strawberry Peach Jam

A delightful homemade jam combining the fresh flavors of strawberries and peaches, sweetened naturally with honey.

Ingredients

  • 9 cups chopped strawberries
  • 9 cups chopped peaches
  • 2 cups honey
  • 1/2 cup lemon juice
  • 3 tsp Pomona’s Pectin
  • 4 tsp calcium water
  • 2 tbsp white vinegar
  • Large pot for cooking the jam
  • Spoon for stirring
  • Canning jars with lids and bands
  • Canning funnel
  • Jar lifter
  • Bubble popper
  • Boiling water bath canner
  • Clean, damp cloth
  • Potato masher or immersion blender

Instructions

  1. Prepare your ingredients by washing, hulling, and chopping your strawberries and peaches.
  2. Combine the chopped strawberries, peaches, and lemon juice in a large pot.
  3. Add honey and prepared Pomona’s Pectin to the fruit mixture.
  4. Cook the mixture over medium heat, stirring frequently, until thickened (about 30 minutes).
  5. Prepare the boiling water bath canner while the jam is cooking.
  6. Fill the prepared jars with the jam, leaving a 1/4-inch headspace.
  7. Process the jars in the boiling water bath for about 10 minutes.
  8. Store the sealed jars in a cool, dark place.

Notes

For best results, use local raw honey and fresh fruits when possible. Ensure all canning equipment is sanitized.
