  • 1 cup protein powder (vanilla or unflavored)
  • 1 cup oat flour or almond flour
  • 1/2 cup Greek yogurt (or dairy-free alternative)
  • 1 egg (or flax egg for vegan option)
  • 1 medium baked and mashed sweet potato
  • 1/2 cup natural sweetener (maple syrup or honey)
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1/2 cup mix-ins (chocolate chips, nuts, or dried fruit)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix the protein powder, oat flour (or almond flour), and spices in a large bowl.
  3. Combine the mashed sweet potato, Greek yogurt, egg, and natural sweetener in another bowl until creamy.
  4. Pour the wet ingredients into the dry and stir until just combined; fold in mix-ins if desired.
  5. Scoop rounded dough portions onto the baking sheet, leaving space between them.
  6. Bake for 12-15 minutes, or until edges are golden.
  7. Cool for 5 minutes on the baking sheet before transferring to a wire rack.
