Protein Pumpkin Oreo Cookies

Deliciously healthy cookies that combine pumpkin flavor with a protein boost, perfect for a snack or dessert.

Ingredients

  • 1 cup protein powder
  • 1 cup oat flour or almond flour
  • 1/2 cup Greek yogurt
  • 1 large egg
  • 1 teaspoon seasonal spices (cinnamon, nutmeg, allspice)
  • Flavor-specific mix-ins (mini Oreo pieces, chocolate chips, dried cranberries)
  • 1/3 cup natural sweetener (maple syrup or honey)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the dry ingredients: whisk the protein powder and oat or almond flour with the spices.
  3. Combine wet ingredients: mix Greek yogurt, egg, and natural sweetener until well combined.
  4. Mix together the wet and dry ingredients until fully combined.
  5. Add your mix-ins and fold them into the dough.
  6. Scoop the cookie dough onto a lined baking sheet.
  7. Bake for 12-15 minutes, until lightly browned at the edges.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

If you want a lower sugar option, consider using a stevia-based sweetener. The cookies can be frozen before baking – just add extra time while baking straight from the freezer.
