Protein Costco Peanut Butter Pie

A delicious and nutritious twist on the classic peanut butter pie, packed with protein and guilt-free goodness!

  • 1 cup light flour alternative (almond, coconut, or oat flour)
  • 3 tablespoons melted coconut oil
  • A pinch of salt
  • 2 cups Greek yogurt or cottage cheese
  • 1 scoop protein powder
  • ½ cup creamy peanut butter
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • Light whipped cream (for topping)
  • Optional: crushed peanuts or chocolate chips (for garnish)

Instructions

  1. Prepare your crust: In a mixing bowl, combine 1 cup of your chosen light flour alternative with 3 tablespoons of melted coconut oil and a pinch of salt. Mix until crumbly, then press it into the base of a pie dish evenly.
  2. Bake the crust: Preheat your oven to 350°F (175°C) and bake the crust for 8-10 minutes until lightly golden.
  3. Make the filling: In a large mixing bowl, combine 2 cups of Greek yogurt or cottage cheese, 1 scoop of protein powder, ½ cup of creamy peanut butter, and 2 tablespoons of honey or maple syrup. Blend until smooth.
  4. Add flavors: Stir in 1 teaspoon of vanilla extract and adjust sweetness if desired.
  5. Pour and chill: Pour the filling into your cooled crust and let it chill in the fridge for at least 2 hours to set.
  6. Top it off: Once set, add light whipped cream on top and garnish with crushed peanuts or chocolate chips.
  7. Slice and serve: Slice the pie and enjoy it chilled!

Notes

This pie can be made dairy-free by using dairy-free yogurt and cream alternatives. It can also be frozen for later enjoyment.
