Protein-Packed Lemon Meringue Pie

A healthy twist on the classic lemon meringue pie, packed with protein and zesty flavor, perfect for guilt-free indulgence.

  • 1 ½ cups light flour alternative (almond flour, coconut flour, etc.)
  • ¼ cup melted butter (or plant-based option)
  • 2 tablespoons sugar (or low-calorie sweetener)
  • 1 cup water
  • ½ cup fresh lemon juice
  • Zest of 2 lemons
  • ¼ cup sugar (or chosen sweetener)
  • 3 egg yolks
  • ¼ cup protein powder
  • 4 egg whites
  • ¼ cup sugar (or sugar substitute)

Instructions

  1. Prepare the crust: Preheat your oven to 350°F (175°C). Combine flour alternative, melted butter, and sugar in a mixing bowl. Press into a pie dish and bake for 10–12 minutes until golden.
  2. Make the lemon filling: In a saucepan over medium heat, combine water, lemon juice, lemon zest, and sugar. Whisk egg yolks and protein powder in a separate bowl. Gradually add to the simmering lemon mixture while whisking. Allow to cook for 5–7 minutes until thickened.
  3. Create the meringue: Beat egg whites until soft peaks form, then gradually add sugar while continuing to beat until stiff peaks form.
  4. Assemble your pie: Pour the lemon filling into the crust and spread meringue on top. Bake for 10–15 minutes until meringue is golden.
  5. Cool and serve: Let the pie cool completely, then refrigerate for at least 2 hours before slicing.

Notes

Serve chilled, possibly with a dollop of Greek yogurt or a drizzle of honey. Store leftovers in an airtight container in the fridge for 3-4 days.
