Protein Double Chocolate Muffins

Delicious and nourishing muffins, packed with protein for a guilt-free treat.

Ingredients

  • 1 cup Greek yogurt or cottage cheese
  • 1 cup milk (reduced-fat or dairy-free)
  • 2 teaspoons vanilla extract
  • 1 cup chocolate or vanilla protein powder
  • 1 cup light flour alternative (almond, oat, or whole wheat flour)
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • Pinch of salt
  • 1/2 cup dark chocolate chips or chunks

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a 12-cup muffin tin with paper liners or grease it lightly.
  3. Mix the wet ingredients: In a large mixing bowl, combine Greek yogurt, milk, and vanilla.
  4. Prepare your dry ingredients: In another bowl, mix light flour alternative, cocoa powder, baking powder, and salt.
  5. Combine the wet and dry ingredients, folding gently until just combined.
  6. Add the chocolate chips, folding them into the batter.
  7. Fill the muffin tins about 3/4 full with the mixture.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Cool on a wire rack.

Notes

Feel free to add nuts or berries for extra flavor! Store muffins in an airtight container for up to 3 days.
