Protein Cranberry White Chocolate Cookies

  • 1 scoop vanilla or unflavored protein powder
  • 1/2 cup Greek yogurt
  • 1 egg
  • 1/4 cup natural sweetener (maple syrup or honey)
  • 1 cup dried cranberries
  • 1/2 cup white chocolate chips
  • 1 teaspoon seasonal spice (cinnamon or nutmeg)
  • Optional flavor-specific mix-ins (chopped nuts, coconut, sea salt)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the dry ingredients: In a large bowl, whisk together the oat flour, protein powder, and seasonal spice.
  3. Combine the wet ingredients: In a separate bowl, mix together the Greek yogurt, egg, and natural sweetener until smooth.
  4. Combine the wet and dry ingredients, mixing until just combined.
  5. Add the mix-ins: Gently fold in the dried cranberries and white chocolate chips.
  6. Form mounds of dough on a lined baking sheet, leaving space between each cookie.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Cool on the sheet for a couple of minutes before transferring to a wire rack.

Notes

For a different flavor, you can swap cranberries for dried cherries or add chopped nuts for crunch.
