Protein-Packed Tres Leches Cake

A healthier, protein-packed version of the classic Tres Leches Cake that maintains all the delicious flavor and texture.

Ingredients

  • 1 cup Greek Yogurt
  • 1 cup Cottage Cheese
  • 1/2 cup Vanilla Protein Powder
  • 1 1/2 cups Light Flour Alternative (Almond flour or gluten-free blend)
  • 1 cup Reduced-Fat Dairy (Skim milk or reduced-fat heavy cream)
  • 1 tsp Vanilla Extract
  • 1/2 tsp Cinnamon
  • Optional: Splash of Rum
  • 1 cup Milk Mixture (evaporated & sweetened condensed milk + whole milk)
  • Reduced-fat whipped cream for topping
  • Fresh berries for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients in a large bowl: light flour alternative, protein powder, and salt.
  3. Combine in another bowl the wet ingredients: Greek yogurt, cottage cheese, and reduced-fat dairy, along with vanilla extract and any flavor additions.
  4. Fold the dry ingredients into the wet mixture gently.
  5. Pour the batter into a greased 9×13 inch baking pan and bake for 20-25 minutes.
  6. Prepare the milk mixture by whisking together the three milks in a bowl.
  7. Soak the baked cake with the milk mixture after it has cooled, poking holes for absorption.
  8. Refrigerate for at least 2 hours or overnight.
  9. Top the cake with reduced-fat whipped cream and fresh berries before serving.

Notes

For a dairy-free option, substitute Greek yogurt and cottage cheese with coconut yogurt and blend until smooth. You can also try adding nuts or different flavor infusions for variations.
