Protein-Packed Costco Pecan Pie

A nutritious twist on classic pecan pie, packed with protein and flavor while maintaining a delightful taste.

  • 1 cup of Greek yogurt or cottage cheese
  • 1/2 cup of vanilla protein powder
  • 1 cup of light flour alternative (almond or oat flour)
  • 1/2 cup of reduced-fat dairy (milk or cream)
  • 1 cup of pecans, roughly chopped
  • 1/2 cup of maple syrup or honey
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of salt
  • Optional spices (cinnamon or nutmeg)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep your pie crust: mix 1 cup of light flour alternative with a pinch of salt, and 1/4 cup of melted coconut oil or butter, then press into a pie pan and bake for 10 minutes.
  3. Combine Greek yogurt (or cottage cheese), protein powder, and reduced-fat dairy in a mixing bowl; whisk until smooth.
  4. Add maple syrup (or honey), vanilla extract, and salt to the mixing bowl; stir to combine.
  5. Fold in chopped pecans gently.
  6. Pour the filling into your pre-baked pie crust.
  7. Bake in the preheated oven for 30-35 minutes, or until the center is set but slightly jiggly.
  8. Remove from oven and let it cool completely.
  9. Serve chilled or at room temperature with yogurt or whipped cream if desired.

Notes

This pie can be made a day in advance. Store in the refrigerator and let sit at room temperature before serving.
