Protein-Packed Tuxedo Chocolate Mousse Cake

A rich yet wholesome chocolate mousse cake layered with protein for a guilt-free indulgence.

  • 1 cup Greek yogurt or cottage cheese
  • 1 scoop protein powder (chocolate flavor)
  • 1 cup light flour alternative (almond or coconut flour)
  • 1/2 cup reduced-fat cream cheese or whipped cream
  • 1/2 cup quality dark chocolate (melted)
  • 1/4 cup sweetener (agave, honey, or sugar)
  • 2 large eggs
  • Parchment paper (for lining the pan)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9-inch round cake pan by greasing it and lining the bottom with parchment paper.
  3. Mix the cake batter: In a large bowl, combine light flour, protein powder, and sweetener. In another bowl, mix Greek yogurt (or cottage cheese), eggs, and melted dark chocolate. Combine these wet and dry ingredients until smooth.
  4. Bake the cake: Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  5. Cool the cake for about 10 minutes in the pan, then transfer to a wire rack to cool completely.
  6. Prepare the mousse: Beat Greek yogurt (or cottage cheese) and protein powder until smooth, then fold in melted dark chocolate.
  7. Layer the cake: Slice the cooled cake horizontally, spread half the mousse on the first layer, place the second layer on top, and frost with remaining mousse.
  8. Chill in the refrigerator for at least one hour to set the mousse.

Notes

Garnish with a dollop of yogurt or whipped cream and a sprinkle of dark chocolate. Store in the fridge for 3-4 days.
