Protein Costco Carrot Cake

A healthier, protein-packed twist on the classic Costco carrot cake, perfect for cravings and post-workout treats.

  • 1 cup Greek Yogurt or Cottage Cheese
  • 3 scoops Protein Powder (vanilla recommended)
  • 1/2 cup Reduced-Fat Dairy (milk or cream cheese)
  • 2 cups Light Flour Alternative (almond, oat or gluten-free blend)
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 12 teaspoons Cinnamon
  • Pinch of Nutmeg
  • 2 cups grated Carrots
  • Walnuts or Pecans (for topping, optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13 inch baking pan with non-stick spray and parchment paper.
  3. Mix the wet ingredients: in a bowl, combine Greek yogurt, protein powder, and reduced-fat dairy.
  4. Incorporate grated carrots into the wet mixture.
  5. Add the dry ingredients into the wet mix, stirring until just combined.
  6. Bake the cake for 25-30 minutes or until a toothpick comes out clean.
  7. Cool the cake in the pan for 10 minutes before transferring to a wire rack.
  8. Frost with a protein-rich mixture of cream cheese and Greek yogurt after the cake is completely cool.

Notes

For best results, let ingredients come to room temperature before mixing. You can also add variations like mashed bananas or orange zest for extra flavor.
