1 loaf Costco Brioche Bread, sliced thick
4 eggs
2 cups reduced-fat dairy (milk or cream)
1 cup Greek yogurt or cottage cheese
1/2 cup protein powder (optional)
1/2 cup light flour alternative (almond or whole wheat flour)
2 teaspoons vanilla extract
A generous pinch of cinnamon
Instructions
Prep the Bread: Slice the brioche into thick pieces, about one inch thick.
Make the Custard: In a large bowl, whisk together eggs, reduced-fat dairy, Greek yogurt, protein powder, light flour, vanilla extract, and cinnamon until smooth.
Combine Bread and Custard: Place bread in a greased baking dish, pour custard over, and press down gently. Cover and refrigerate for at least 2 hours or overnight.
Preheat the Oven: Preheat to 350°F (175°C).
Bake: Bake for 45-50 minutes until golden brown and set. It should bounce back slightly when touched.
