Protein-Packed Costco Apple Pie

A delightful twist on the classic apple pie, this protein-packed version uses Greek yogurt, protein powder, and a light flour alternative for a healthier dessert.

  • 45 medium-sized apples (Fuji and Granny Smith recommended)
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup sweetener (stevia or maple syrup)
  • 1 teaspoon vanilla extract
  • 1 cup light flour alternative (almond or oat flour)
  • 1 scoop protein powder (vanilla or cinnamon)
  • 1/4 cup reduced-fat butter or coconut oil
  • 1/2 cup Greek yogurt or cottage cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel, core, and slice the apples.
  3. Combine the sliced apples with cinnamon, nutmeg, sweetener, and vanilla extract.
  4. Let the mixture sit for 10-15 minutes to release juices.
  5. Mix together the light flour alternative, protein powder, and reduced-fat butter until crumbly.
  6. Add Greek yogurt or cottage cheese to the mixture and form into a dough.
  7. Divide the dough into two halves and roll out one half into a pie base.
  8. Spoon the apple filling into the crust, packing it tightly.
  9. Roll out the second half of the dough for the top and crimp the edges.
  10. Make slits in the top crust and sprinkle with cinnamon.
  11. Bake for 30-40 minutes until the apples are tender and the crust is golden brown.

Notes

Serve warm with a dollop of Greek yogurt on the side. Optional toppings include chopped nuts or honey.
