  • ½ cup Greek yogurt
  • 1 egg
  • 1 cup pumpkin puree
  • 1 cup oat flour or almond flour
  • 1 scoop protein powder
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • Pinch of ginger
  • Pinch of salt
  • Natural sweetener (honey, maple syrup, or agave)
  • Flavor-specific mix-ins (chocolate chips, nuts, or dried fruit)

Instructions

  1. Brown the butter in a saucepan over medium heat for about 5-7 minutes until it turns golden brown.
  2. Cool the butter for about 10 minutes.
  3. Mix the cooled butter, Greek yogurt, egg, and natural sweetener until smooth.
  4. Add the pumpkin puree and spices; whisk until combined.
  5. Combine oat flour, protein powder, and salt in a separate bowl.
  6. Bring the dry mixture into the wet mixture, folding gently until combined.
  7. Add any mix-ins like chocolate chips or nuts.
  8. Shape dollops of dough on a baking sheet, leaving space in between.
  9. Bake at 350°F (175°C) for 10-12 minutes until edges are golden.
  10. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
