Wholesome and sweet Pumpkin Chickpea Blondies perfect for cozy evenings or a weekday snack. These blondies combine chickpeas and pumpkin puree for a delightful twist on a classic treat.

  • 1 can chickpeas, drained and rinsed
  • 1 cup pumpkin puree
  • 1/2 cup almond butter or any nut butter
  • 1/2 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin spice
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Blend the drained chickpeas, pumpkin puree, almond butter, maple syrup, and vanilla extract until smooth.
  3. Add the baking powder, pumpkin spice, and salt, and pulse until combined.
  4. Fold in the chocolate chips if using.
  5. Prepare an 8×8-inch baking dish by lining it with parchment paper or greasing it.
  6. Pour the blondie batter into the pan and spread it evenly.
  7. Bake for 25-30 minutes, or until set in the center and a toothpick comes out clean.
  8. Let the blondies cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For nut-free, swap almond butter for sunflower seed butter. Feel free to add other mix-ins like chopped walnuts or dried cranberries.
