Ultimate Lemon Zucchini Bread

  • 1 cup canola or vegetable oil
  • 6 oz Greek yogurt
  • 1 Tbsp lemon juice
  • 3 eggs
  • 2 cups sugar
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 2 tsp lemon zest
  • 1 tsp salt
  • 2 cups grated zucchini
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 12 Tbsp lemon juice (for glaze)
  • 2 Tbsp lemon zest (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grate the zucchini and squeeze out excess moisture.
  3. Mix the oil, Greek yogurt, lemon juice, and vanilla together in a bowl. Add the eggs one at a time.
  4. Add the sugar, lemon zest, and milk, and mix until creamy.
  5. Sift together flour, salt, baking soda, and baking powder in another bowl and fold into wet mixture.
  6. Incorporate grated zucchini into the batter.
  7. Prepare a 9×5-inch loaf pan by greasing or lining it with parchment paper.
  8. Pour the batter into the loaf pan and bake for 55–65 minutes.
  9. Cool the bread for 10 minutes in the pan before transferring to a wire rack.
  10. Glaze by whisking powdered sugar, lemon juice, and zest until smooth and drizzle over the cooled bread.

Notes

Try adding nuts or poppy seeds for a twist! Store in an airtight container to keep fresh.
