Butternut Squash and Pecan Muffins

Cozy muffins made with butternut squash and pecans, perfect for fall gatherings.

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon freshly grated nutmeg
  • 1/2 teaspoon cinnamon
  • 1 egg
  • 3/4 cup milk
  • 1 tablespoon melted butter
  • 1/2 cup cooked and pureed butternut squash
  • 1/2 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep your muffin tin by greasing it or lining it with paper liners.
  3. Mix the dry ingredients: flour, sugar, baking powder, salt, nutmeg, and cinnamon in a large bowl.
  4. Combine the wet ingredients: egg, milk, melted butter, and pureed butternut squash in another bowl.
  5. Bring it all together by gradually pouring the wet ingredients into the dry ingredients, stirring gently.
  6. Add the chopped pecans and fold them gently into the batter.
  7. Scoop and fill each muffin cup about 2/3 full with batter.
  8. Bake for about 20–25 minutes or until a toothpick comes out clean.
  9. Cool the muffins in the pan for a few minutes before transferring them to a wire rack.

Notes

These muffins are delightful warm or at room temperature. Pair with honey or butter for extra indulgence.
