Grilled Shrimp Salad with Lemon Vinaigrette

A vibrant and invigorating shrimp salad tossed with creamy avocado and tangy lemon vinaigrette, perfect for any gathering.

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 5 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/4 cup red onion, thinly sliced
  • 1 lemon, juiced
  • 2 tablespoons Dijon mustard
  • 1/4 cup olive oil (for vinaigrette)
  • Salt and pepper to taste (for vinaigrette)

Instructions

  1. Marinate the shrimp: In a mixing bowl, combine the shrimp, 2 tablespoons of olive oil, salt, and pepper. Toss until well-coated and let marinate for 15-30 minutes.
  2. Prepare the grill: Preheat your grill to medium-high heat.
  3. Grill the shrimp: Once the grill is ready, thread the shrimp onto skewers and grill for 2–3 minutes on each side until opaque and slightly charred.
  4. Create the lemon vinaigrette: In a small bowl, whisk together lemon juice, Dijon mustard, and 1/4 cup olive oil. Season with salt and pepper to taste.
  5. Assemble the salad: In a large serving bowl, layer the mixed greens, cherry tomatoes, sliced avocado, and red onions. Pour the vinaigrette over and toss gently. Top with the grilled shrimp.

Notes

For a spicy version, add chili powder to the marinade. Serve with toasted seeds or nuts for extra crunch.
