Greek Tomato Cucumber Salad with Feta

A refreshing Mediterranean salad featuring diced tomatoes, cucumbers, feta, and Kalamata olives.

  • 2 large tomatoes, diced
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • 1/2 cup Kalamata olives, pitted and halved
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Begin by washing your tomatoes and cucumber thoroughly. Dice the tomatoes into bite-sized pieces and chop the cucumber.
  2. Grab your red onion and thinly slice it.
  3. In a large salad bowl, combine the diced tomatoes, cucumber, and sliced red onion.
  4. Sprinkle the crumbled feta over the salad and toss in the halved Kalamata olives.
  5. Drizzle the olive oil and red wine vinegar over the salad. Sprinkle the dried oregano, and season with salt and pepper to taste.
  6. Toss everything gently until the salad is well coated with the dressing.
  7. For the best flavor, let your salad sit for about 10-15 minutes before serving.

Notes

Serve at room temperature alongside grilled meats or as a vegetarian option. You can also add avocado or cook quinoa for a heartier dish.
