Greek Meatball Bowl

A satisfying bowl featuring golden, juicy meatballs on a bed of rice or quinoa, drizzled with creamy tzatziki sauce.

  • 1 pound ground beef or lamb
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • Olive oil for frying
  • Cooked rice or quinoa
  • Tzatziki sauce
  • Sliced cucumbers and tomatoes

Instructions

  1. Prepare the Meatball Mixture: In a large bowl, combine ground beef or lamb, breadcrumbs, grated Parmesan, chopped parsley, egg, minced garlic, oregano, salt, and pepper. Mix until just combined.
  2. Shape the Meatballs: With wet hands, roll the mixture into golf ball-sized meatballs and place them on a parchment-lined baking sheet.
  3. Sear the Meatballs: In a skillet, heat olive oil over medium heat. Add meatballs in batches, searing them on all sides for about 6-8 minutes until browned and cooked through.
  4. Prepare the Base: Cook rice or quinoa according to package instructions while meatballs are searing.
  5. Make the Tzatziki Sauce: Mix Greek yogurt, grated cucumber, minced garlic, lemon juice, and salt in a bowl.
  6. Assemble the Bowls: Scoop rice or quinoa into bowls, top with meatballs, drizzle with tzatziki, and garnish with sliced cucumbers and tomatoes.

Notes

This recipe can be made ahead of time and stored in the fridge for 1-2 days or frozen for up to 3 months. Serve with extra tzatziki on the side.
