Greek Lemon Chicken with Potatoes

A comforting and zesty dish featuring juicy chicken thighs and tender potatoes, infused with fresh lemon and herbs.

Ingredients

  • Bone-in Chicken Thighs
  • Yellow Potatoes
  • Garlic
  • Olive Oil
  • Lemon Zest and Juice
  • Fresh Oregano
  • Salt and Pepper
  • Chicken Broth

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels and season with salt and pepper.
  3. Sear the chicken in a skillet with olive oil for about 5-7 minutes until browned.
  4. Remove the chicken and add quartered potatoes to the skillet, tossing them in chicken drippings for flavor.
  5. Toss in minced garlic and sauté for about a minute.
  6. Add lemon juice, zest, and chicken broth, stirring well.
  7. Return the seared chicken to the skillet among the potatoes.
  8. Sprinkle fresh oregano over everything.
  9. Roast in the oven for about 35-40 minutes.
  10. Let the dish rest for a few minutes before serving.

Notes

Serve with warm pita bread and garnish with fresh parsley or lemon wedges.
