Pumpkin Cream Cheese Muffins

Delightfully soft muffins filled with creamy cheese, perfect for autumn mornings and cozy gatherings.

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1 cup pumpkin puree
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 ounces cream cheese, softened
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a muffin tin by greasing or lining it with paper liners.
  3. Mix the dry ingredients in a large bowl until well blended.
  4. Combine the wet ingredients in another bowl and mix well.
  5. Bring the wet ingredients into the dry ingredients and stir until just combined.
  6. Prepare the cream cheese filling by blending cream cheese and powdered sugar until smooth.
  7. Scoop muffin batter into the pan, add cream cheese filling, then top with more batter.
  8. Bake for 20-25 minutes until a toothpick comes out clean.
  9. Cool muffins in the pan for 5 minutes, then transfer to a wire rack.

Notes

For a gluten-free version, substitute all-purpose flour with a 1:1 gluten-free flour blend.
