Apple Cider Donut Muffins

A cozy fall treat that captures the nostalgic flavor of apple cider donuts in the form of fluffy muffins.

  • 2 cups all-purpose flour
  • 1 cup apple cider
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup melted butter
  • 2 teaspoons ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly with cooking spray.
  2. Mix the dry ingredients: In a large bowl, whisk together the flour, sugar, cinnamon, and a pinch of salt.
  3. Combine the wet ingredients: In another bowl, whisk the eggs and mix in the apple cider and melted butter.
  4. Combine wet and dry: Pour the wet mixture into the dry ingredients and gently mix until just combined.
  5. Fill the muffin tin: Scoop the batter into the prepared muffin tins, filling each liner about 2/3 full.
  6. Bake: Bake for 18-22 minutes, or until a toothpick inserted comes out clean.
  7. Cool and enjoy: Let the muffins cool in the tin for a few minutes, then transfer them to a wire rack.

Notes

For serving, dust with cinnamon sugar or serve with warm apple butter or cream cheese.
