Easy Shrimp Salad

A vibrant salad filled with plump shrimp, mixed greens, and a zesty dressing that’s perfect for warm days.

  • 1 pound shrimp, peeled and deveined
  • 2 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Prepare the shrimp: In a large pot, bring salted water to a boil. Once boiling, add in your shrimp and cook for 2-3 minutes, until they turn pink and opaque.
  2. Ice bath time: Immediately after removing the shrimp from the heat, plunge them into a bowl of ice water for 2-3 minutes.
  3. Mix the dressing: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  4. Combine the salad ingredients: In a large salad bowl, toss together the mixed greens, cherry tomatoes, cucumber, and red onion. Pour the dressing over the top and toss to coat evenly.
  5. Add the shrimp: Gently fold the cooled shrimp into your salad.
  6. Serve and enjoy! Serve your salad immediately with crusty bread on the side.

Notes

Consider adding diced mango or avocado for a tropical twist. This salad is great for meal prep; layer ingredients to keep them fresh.
