Nectarine Galette

A delightful and rustic summer dessert featuring juicy nectarines in a flaky crust, perfect for warm evenings.

  • 1¼ cup All-Purpose Flour
  • ¾ tsp Salt
  • 1 Stick Cold Unsalted Butter
  • 1 tbsp Sugar
  • 23 tbsp Ice Cold Water
  • 3 cups Nectarines (cut into ½¾ inch wedges)
  • 34 tbsp Cherry Jam
  • 2 tbsp Sugar
  • 2 tbsp Cornstarch
  • ½ tsp Vanilla Extract Paste
  • 1 tbsp Milk (or plant-based milk)
  • 1 tbsp Sugar (for sprinkling on top)

Instructions

  1. Whisk together the flour and salt in a large mixing bowl.
  2. Cut the cold butter into small cubes and add to the flour mixture, working it in until it resembles coarse crumbs.
  3. Sprinkle in the sugar and add the ice-cold water one tablespoon at a time, mixing until the dough comes together.
  4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  5. Slice the nectarines into wedges during dough chilling.
  6. Combine the nectarines, cherry jam, sugar, cornstarch, and vanilla extract in a mixing bowl and toss until well-coated.
  7. Roll out the chilled dough on a floured surface into a roughly 12-inch circle.
  8. Transfer the rolled dough to a parchment-lined baking sheet.
  9. Spoon the nectarine mixture into the center of the dough, leaving a 1.5-2 inch border.
  10. Fold the edges of the dough over the filling and crimp to hold in place.
  11. Brush the crust with milk and sprinkle with sugar.
  12. Preheat your oven to 400°F (200°C) and bake for 25-30 minutes until golden brown.
  13. Cool for 10-15 minutes before slicing and serving.

Notes

Serve warm with ice cream or whipped cream. Adapt your filling to include other stone fruits or add herbs for a unique twist.
