Easy Mediterranean Salad

A vibrant and healthy salad featuring fresh vegetables, chickpeas, and a tangy dressing, perfect for any meal.

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, finely chopped
  • 1 bell pepper, diced
  • 1 cup chickpeas, drained and rinsed
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup black olives, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Prepare the vegetables: Wash all vegetables, then chop the cherry tomatoes in half, cucumber into bite-sized pieces, and dice the bell pepper.
  2. Chop the onion: Finely chop the red onion, soaking it in cold water if needed to tone down the flavor.
  3. Drain and rinse chickpeas to remove the metallic taste.
  4. Toss it all together: In a large mixing bowl, combine all the chopped vegetables, chickpeas, olives, and feta cheese.
  5. Prepare the dressing: Whisk together olive oil, red wine vinegar, oregano, salt, and pepper until blended.
  6. Dress the salad: Drizzle the dressing over the salad and toss gently to coat.
  7. Let it rest for 10-15 minutes before serving to meld flavors.
  8. Serve in a bowl, optionally topping with extra feta or fresh herbs.

Notes

This salad can be made ahead of time and tastes even better after sitting. Add feta just before serving for freshness.
