Huckleberry Cake

A delightful cake bursting with the sweet-tart flavor of huckleberries, perfect for any occasion.

  • 1 cup huckleberries (or blueberries)
  • 1 ½ cups all-purpose flour
  • 1 cup sugar
  • ½ cup vegetable oil
  • 1 cup plant-based milk (or regular milk)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8-inch round cake pan by greasing it and optional lining with parchment paper.
  3. Mix your dry ingredients: flour, baking powder, baking soda, and salt in a mixing bowl.
  4. Combine the sugar and vegetable oil in another bowl, then add the milk and vanilla extract, mixing until smooth.
  5. Bring together the dry mixture and wet mixture, stirring gently until no dry flour remains.
  6. Fold in the huckleberries gently with a spatula.
  7. Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick comes out clean.
  8. Cool the cake in the pan for about 10 minutes, then transfer it to a wire rack.
  9. Garnish as desired and serve.

Notes

For best results, be gentle when folding in the berries to avoid smashing them. Top with whipped cream for a delightful presentation.
