Apple Cinnamon Muffins

Delightfully warm and fluffy muffins filled with juicy apples and fragrant cinnamon, perfect for any cozy occasion.

Ingredients

  • 2 cups all-purpose flour
  • 2 apples, diced
  • 2 eggs
  • 1/2 cup vegetable oil
  • 3/4 cup brown sugar
  • 2 teaspoons cinnamon
  • 2 teaspoons baking powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 12-cup muffin tin with paper liners or cooking spray.
  3. Combine in a mixing bowl the flour, baking powder, cinnamon, and a pinch of salt.
  4. Mix together vegetable oil and brown sugar until well combined, then add eggs one at a time.
  5. Fold in the diced apples.
  6. Combine wet and dry mixtures, stirring until just combined.
  7. Fill each muffin cup about two-thirds full.
  8. Bake for about 18-20 minutes or until a toothpick comes out clean.
  9. Cool in the tin for 5 minutes, then transfer to a wire rack.

Notes

These muffins freeze well. Enjoy them fresh or with a pat of butter.
