Cucumber and Tomato Salad with Feta

A refreshing salad celebrating spring with vibrant flavors of cucumbers, tomatoes, and feta cheese.

Ingredients

  • 2 cups cucumbers, diced
  • 2 cups tomatoes, diced
  • 1 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Prepare your veggies by washing cucumbers and tomatoes under cold running water. Dice cucumbers and tomatoes into bite-sized pieces.
  2. Slice the red onion thinly and consider soaking it if you want to mellow out the flavor.
  3. Mix it up in a bowl by combining diced cucumbers, tomatoes, and red onions, and gently toss them together.
  4. Add the crumbled feta cheese and freshly chopped parsley on top.
  5. Dress the salad by whisking olive oil, red wine vinegar, salt, and pepper together and drizzling over the salad.
  6. Taste and adjust seasoning as needed, letting it sit for a few minutes for flavors to meld.
  7. Chill the salad in the fridge for at least 20 minutes if time allows.

Notes

Serve chilled for a refreshing dish. Great as a side for grilled meats or on its own.
