Cucumber Tomato Feta Salad

A refreshing summer salad made with cucumbers, tomatoes, and feta cheese, perfect for any occasion.

  • 2 large English cucumbers
  • 12 ounces cherry or grape tomatoes
  • ¾ medium red onion
  • 8 ounces feta cheese
  • 1 tablespoon fresh dill
  • ½ cup extra-virgin olive oil
  • ¼ cup red wine vinegar
  • 4 garlic cloves, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon freshly squeezed lemon juice
  • ½ tablespoon honey
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • ½ teaspoon black pepper

Instructions

  1. Prep Your Ingredients: Wash your cucumbers, tomatoes, and herbs under cold water. Pat them dry.
  2. Cut the Cucumbers: Slice the ends off the cucumbers, cut them in half lengthwise, and chop into ½-inch cubes.
  3. Halve the Tomatoes: Halve or quarter the cherry or grape tomatoes, or dice larger tomatoes.
  4. Slice the Onion: Thinly slice your red onion and soak in cold water if needed.
  5. Crumble the Feta: In a bowl, crumble the feta cheese, leaving larger chunks for texture.
  6. Mix the Dressings: Whisk together olive oil, red wine vinegar, minced garlic, Dijon mustard, lemon juice, honey, salt, Italian seasoning, and black pepper in a separate bowl.
  7. Combine Everything: In a large bowl, add cucumbers, tomatoes, red onion, feta, and dill, and pour dressing over. Gently toss.
  8. Taste and Adjust: Taste your salad and adjust seasonings as needed.
  9. Chill: Let the salad chill in the refrigerator for at least 30 minutes.
  10. Serve and Enjoy: Toss again before serving and enjoy!

Notes

Best enjoyed fresh, but can be stored for up to 3 days in the fridge.
