Greek Cucumber Tomato and Feta Salad with Chickpeas

A vibrant and refreshing Mediterranean salad featuring cucumbers, tomatoes, feta cheese, and chickpeas.

  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1 cup feta cheese, crumbled
  • 1 can chickpeas, drained and rinsed
  • 1/4 red onion, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prep your veggies: Wash your cucumber and tomatoes thoroughly. Pat them dry and chop them into bite-sized pieces.
  2. Chop the onion: Finely chop the red onion; soak in cold water if you want a milder flavor.
  3. Open the chickpeas: Drain and rinse chickpeas under cold water.
  4. Bringing it all together: In a large mixing bowl, combine diced cucumber, tomatoes, chickpeas, and red onion. Gently fold them together.
  5. Add the feta: Crumble feta over the salad and fold it in gently.
  6. Dress it up: In a small bowl, whisk olive oil, red wine vinegar, salt, and pepper. Pour over the salad and mix gently.
  7. Garnish and serve: Sprinkle fresh parsley on top before serving.

Notes

This salad can be made a day in advance; mix the dressing separately and combine just before serving.
