  • 2 Cucumbers, firm and fresh
  • 4 Tomatoes, diced (vine-ripened or heirloom recommended)
  • 1 cup Feta Cheese, crumbled
  • 3 tablespoons Olive Oil, extra virgin
  • 1 tablespoon Balsamic or Red Wine Vinegar
  • Fresh Herbs (Basil or Parsley), chopped
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Prep your veggies: Wash cucumbers and tomatoes, cut cucumbers into bite-sized pieces, and halve or chop the tomatoes.
  2. Combine in a bowl: In a large mixing bowl, combine cucumbers, tomatoes, and crumbled feta cheese.
  3. Make the dressing: Whisk together olive oil, vinegar, salt, and pepper in a separate bowl or jar.
  4. Mix it up: Pour the dressing over the salad and toss gently to combine.
  5. Add fresh herbs: Sprinkle chopped herbs and give a final toss.
  6. Chill before serving: Let the salad sit at room temperature or refrigerate for 20-30 minutes.
