Cucumber Tomato Avocado Salad

A refreshing and vibrant salad perfect for summertime, featuring crisp cucumbers, juicy tomatoes, and creamy avocado.

  • 2 Cucumbers
  • 4 ripe Tomatoes
  • 1 Avocado
  • 1/4 cup Fresh Cilantro
  • 2 tablespoons Lemon Juice
  • 2 tablespoons Olive Oil
  • Salt & Pepper to taste

Instructions

  1. Prepare the veggies: Wash cucumbers and tomatoes under cool water. For extra flavor, soak cucumbers in salted water for 10 minutes.
  2. Chop it up: Slice cucumbers in half lengthwise and chop into bite-sized pieces; quarter or halve the tomatoes.
  3. Cut the avocado in half, scoop out the pit, and slice into cubes. Toss with lemon juice to prevent browning.
  4. Mix it up: In a large mixing bowl, combine chopped cucumbers, tomatoes, and avocado gently.
  5. Dress the salad: Drizzle with olive oil and lemon juice, add salt and pepper to taste.
  6. Finishing touch: Chop fresh cilantro and toss into the salad. Stir gently to combine.
