Refreshing Cucumber Feta Salad

A delightful Cucumber Feta Salad that is perfect for summer gatherings, bursting with flavor and freshness.

Ingredients

  • 2 large cucumbers
  • 1 cup crumbled feta cheese
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh herbs (optional, e.g., dill or parsley)

Instructions

  1. Wash your cucumbers. You can peel them if you like, but I love leaving the skin on for added color and texture.
  2. Cut the cucumbers in half lengthwise, then slice them into half-moons.
  3. Sprinkle the sliced cucumbers with salt and let them sit for about 10 minutes before rinsing.
  4. Combine olive oil, red wine vinegar, lemon juice, salt, and pepper in a bowl and whisk until well-combined.
  5. Pour the dressing over the chopped cucumbers and crumbled feta in a large bowl, and toss gently.
  6. Sprinkle fresh herbs over the salad and give it one last gentle toss.
  7. Taste the salad and adjust seasoning if necessary.
  8. Chill the salad in the fridge for at least 30 minutes before serving.

Notes

Feel free to add mixed greens for a more substantial salad.
