Crock Pot Street Tacos

Tender carne asada or flank steak slow-cooked for flavorful street tacos, topped with your favorites.

  • 2 lbs carne asada or flank steak
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 2 tablespoons lime juice
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • Corn tortillas
  • Toppings: cilantro, diced onions, lime wedges, salsa

Instructions

  1. Start by cutting your carne asada or flank steak into manageable chunks (about 2-3 inches) and seasoning with salt, pepper, chili powder, and cumin.
  2. If you have extra time, sear the meat in a hot skillet for 1-2 minutes on all sides.
  3. Chop your onion and mince the garlic, layering them into the bottom of the Crock Pot.
  4. Place the meat atop the onions and garlic, and pour beef broth and lime juice over everything.
  5. Put the lid on your Crock Pot, set it to low, and cook for 8 hours or high for 4 hours.
  6. Once cooking is complete, remove the meat, shred it into bite-sized pieces.
  7. If desired, strain the cooking liquid for a thicker sauce.
  8. Warm the corn tortillas in a skillet or over a flame until pliable.
  9. Assemble tacos with shredded meat, diced onions, cilantro, lime juice, and salsa.

Notes

For a vegetarian option, replace meat with jackfruit and use vegetable broth.
