Butternut Squash Scones

These fluffy and lightly sweetened butternut squash scones capture the essence of fall. Perfect for cozy mornings!

  • 2 3/4 cups all-purpose flour
  • 1/4 cup light brown sugar (firmly packed)
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/3 cup cold unsalted butter (diced)
  • 1 large egg (lightly beaten)
  • 3/4 cup butternut squash purée (cooked)
  • 2/3 cup buttermilk

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Mix the all-purpose flour, brown sugar, baking powder, salt, and baking soda in a large bowl.
  3. Cut in the cold, diced butter into the dry mixture until it resembles coarse crumbs.
  4. Combine the beaten egg, butternut squash purée, and buttermilk in a separate bowl. Pour this into your dry ingredients and stir until just combined.
  5. Shape the dough on a floured surface until it forms a soft ball and pat it into a circle about 1 inch thick.
  6. Cut the dough into wedges or use a round cutter for traditional scones.
  7. Bake for 15–20 minutes, until golden brown.
  8. Cool on a wire rack before serving.

Notes
