Butternut Squash Fritters

Crispy and flavorful fritters made from grated butternut squash, perfect for capturing autumn flavors.

  • 4 cups (1 lb/450 grams) Butternut squash, grated
  • 2 medium-sized eggs
  • ⅓ cup parmesan cheese, grated
  • 1 garlic clove, grated
  • ¾ cup (90100 grams) all-purpose flour
  • 1 teaspoon dried sage
  • ½ teaspoon Italian herb seasoning
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • Olive oil, for spraying (optional)

Instructions

  1. Prep the squash by peeling and grating it.
  2. Squeeze out excess moisture from the grated squash.
  3. Combine the grated squash, eggs, parmesan, garlic, flour, sage, Italian seasoning, salt, and pepper in a mixing bowl.
  4. Heat oil in a non-stick skillet over medium heat.
  5. Form the fritters by scooping the batter into the skillet, flattening slightly.
  6. Fry until golden brown, about 3-4 minutes on each side.
  7. Drain on paper towels to remove excess oil.
  8. Serve warm with yogurt dip or sour cream.
