Easy Baked Yellow Squash Tots

  • 2 cups grated yellow squash, moisture squeezed out
  • 1 cup shredded cheddar cheese
  • 0.5 cup breadcrumbs
  • 0.25 cup finely chopped onion
  • 1 egg
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • Oil for frying (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prep your yellow squash by grating it and squeezing out excess moisture.
  3. Mix together the grated squash, cheddar cheese, breadcrumbs, onion, egg, garlic powder, salt, and black pepper in a large bowl.
  4. Form the mixture into small patties or tots and place on a baking sheet lined with parchment paper.
  5. Bake for about 20-25 minutes, flipping halfway through, until golden brown.
  6. Let cool for a few minutes before serving.
