Creamy Tomato Garlic Pasta

A comforting and creamy pasta dish infused with the rich flavor of roasted garlic and fresh tomatoes.

Ingredients

  • 8 oz spaghetti or fettuccine
  • 1 cup ripe tomatoes, diced
  • 1 cup heavy cream
  • 4 cloves fresh garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste
  • Optional: grated Parmesan for serving

Instructions

  1. Prep your pasta by bringing a pot of salted water to a boil and cooking according to package directions until al dente.
  2. Sauté the garlic in olive oil in a skillet over medium heat until fragrant and slightly golden.
  3. Add the diced tomatoes and season with salt and pepper. Cook until softened.
  4. Incorporate the heavy cream, stirring to combine, and let it simmer for a few minutes.
  5. Mix in the cooked pasta, tossing gently to combine.
  6. Finish with fresh basil and stir before serving.
  7. Serve warm, optionally topped with grated Parmesan.

Notes

Can be served with garlic bread or a simple salad for a complete meal.
