Tomato-Basil Risotto

A creamy and flavorful Tomato-Basil Risotto that serves as the perfect comfort food for any occasion.

  • 3 cups chicken stock (or vegetable stock for vegetarian)
  • 1 tablespoon butter (or olive oil for dairy-free)
  • 1 shallot, minced
  • 2 garlic cloves, pressed or minced
  • Salt and pepper to taste
  • 3/4 cup arborio rice
  • 1/4 cup white wine (Sauvignon Blanc or Pinot Grigio)
  • 2 vine-ripened tomatoes, seeded and chopped
  • 2 cups baby spinach, chopped
  • 10 fresh basil leaves, chopped
  • 1/4 cup freshly grated parmesan cheese (or nutritional yeast for dairy-free)

Instructions

  1. Prep the broth: In a saucepan, bring your chicken stock to a gentle simmer over medium heat.
  2. Sauté the aromatics: In a large skillet, melt the butter over medium heat. Add the minced shallots and sauté until translucent.
  3. Stir in the minced garlic and let it mingle for about 30 seconds.
  4. Add the arborio rice, stirring gently to coat it in the butter. Toast for about 2 minutes.
  5. Pour in the white wine, stirring constantly until it has mostly evaporated.
  6. Slowly ladle in the warm chicken stock, one cup at a time, stirring consistently.
  7. Fold in the chopped tomatoes and spinach when you have about 1 cup of stock left.
  8. Remove from heat and stir in the fresh basil and parmesan cheese. Season with salt and pepper to taste.

Notes

For added richness, you can stir in cream or crème fraîche at the end. Customize with seasonal veggies or proteins for variation.
