Creamy Cheesy Yellow Squash Casserole

A comforting side dish featuring tender yellow squash layered with a creamy mixture and topped with crispy breadcrumbs.

  • 4 cups yellow squash, sliced
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup breadcrumbs
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté the onions and garlic in olive oil until translucent.
  3. Prepare the squash by slicing it into even rounds.
  4. Combine cooked onions and garlic with squash, sour cream, half the cheddar cheese, garlic powder, salt, and pepper. Mix gently.
  5. Transfer the mixture to a greased 9×13 inch baking dish.
  6. Add the remaining cheddar cheese and breadcrumbs on top.
  7. Bake for 30-35 minutes until bubbly and golden brown.
  8. Let it cool for about 10 minutes before serving.

Notes

For a richer flavor, you can add crumbled bacon on top before baking. This casserole reheats beautifully.
