Creamy Basil Chicken Skillet

  • 1.5 lbs chicken breasts, sliced into thin cutlets
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 small shallot, finely diced
  • 1 cup heavy cream
  • 0.5 cup freshly grated Parmesan cheese
  • 0.25 cup fresh basil leaves, chiffonade
  • 1 tsp lemon juice

Instructions

  1. Prepare the chicken: Season the chicken cutlets with 0.5 tsp salt and 0.5 tsp black pepper. Pound the chicken into an even thickness if desired.
  2. Heat the skillet: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken cutlets and cook for about 4-5 minutes on each side until golden brown. Remove from skillet and set aside.
  3. Sauté the aromatics: In the same skillet, lower the heat to medium. Add 2 tablespoons of unsalted butter, then the minced garlic and diced shallot. Cook until fragrant and translucent, about 1-2 minutes.
  4. Make the sauce: Pour in 1 cup of heavy cream, scraping any browned bits from the bottom. Stir until combined and slightly thickened, about 3-5 minutes. Mix in 0.5 cup of grated Parmesan until melted.
  5. Add the chicken back: Return the chicken to the skillet, ensuring they’re coated in the sauce. Simmer together for a few minutes.
  6. Finish with freshness: Just before serving, stir in the fresh basil and lemon juice. Adjust seasoning to taste.
