  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your loaf pans by greasing them with cooking spray or butter.
  3. Whisk together the dry ingredients: flour, baking soda, baking powder, cinnamon, nutmeg, and salt in a large bowl.
  4. Mix your wet ingredients: granulated sugar, brown sugar, pumpkin puree, vegetable oil, and eggs in a separate bowl until smooth and creamy.
  5. Fold the dry ingredients into the wet mixture until just combined.
  6. Prepare the cream cheese filling by beating the softened cream cheese and powdered sugar until smooth.
  7. Pour half of the batter into the prepared loaf pan, dollop in the cream cheese filling, then top with the remaining batter.
  8. Bake for 60-70 minutes, or until a toothpick comes out mostly clean.
  9. Allow to cool in the pan for 15 minutes before transferring to a wire rack.
