  • 1 lb pork sausage
  • 1 lb diced chicken
  • 2 cans kidney beans, drained
  • 1 can black beans, drained
  • 1 can diced tomatoes

  • 1 onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by dicing the onion, carrots, and garlic.
  2. Sauté the ground beef and pork sausage in a large pot over medium heat for about 5-7 minutes.
  3. Add the diced onion, carrots, and minced garlic. Cook until onions are translucent, about 3-4 minutes.
  4. Introduce the beef broth and diced tomatoes to the pot, stirring well.
  5. Add the drained kidney beans, black beans, and corn, stirring to combine.
  6. Season the stew with chili powder, cumin, salt, and pepper.
  7. Let the mixture come to a gentle boil, then reduce to low heat and cover. Simmer for 30 minutes.
