Cold Asian Pasta Salad

A refreshing Cold Asian Pasta Salad with vibrant flavors, crunchy greens, juicy chicken, and a tangy sesame vinaigrette.

Ingredients

  • Juicy Chicken (grilled or rotisserie)
  • Fried Wontons
  • Crunchy Greens (Napa cabbage or romaine)
  • Sweet Mandarins (fresh or canned)
  • Tender Noodles (soba or rice noodles)
  • Asian Sesame Vinaigrette (soy sauce, sesame oil, honey, rice vinegar)

Instructions

  1. Cook the Noodles: Boil salted water and cook the soba noodles according to package instructions for 6–8 minutes.
  2. Prepare the Chicken: Season and grill chicken breasts until cooked through, then chop into bite-sized pieces.
  3. Chop the Greens: Chop Napa cabbage or romaine into thin strips and set aside.
  4. Make the Vinaigrette: Whisk soy sauce, sesame oil, rice vinegar, and honey until combined.
  5. Combine It All Together: Drain noodles, rinse with cold water, and mix with greens, chicken, mandarins, and wontons.
  6. Dress the Salad: Pour vinaigrette over the salad and toss until well-combined.

Notes

Serve chilled for best flavor. Garnish with extra fried wontons for crunch.
