Coconut Chicken Rice Bowls

  • 1 lb chicken breast, diced
  • 1 cup coconut milk
  • 2 cups cooked rice (white or brown)
  • 1 cup mixed vegetables (e.g., bell peppers, broccoli, carrots)
  • 2 tablespoons soy sauce (or gluten-free alternative)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat, then add the diced chicken. Season with salt and pepper, and stir-fry until golden brown, about 6-8 minutes.
  2. Toss in the mixed vegetables and cook until tender-crisp, about 3-5 minutes.
  3. Pour the coconut milk over the chicken and veggies, stirring gently. Let simmer on low heat for about 5-7 minutes.
  4. Add the soy sauce and adjust seasoning with salt, pepper, or more soy sauce to taste.
  5. Assemble the bowls by starting with rice, then topping with the coconut chicken and veggie mix. Garnish with fresh cilantro.

Notes

For a spicy kick, add sriracha or red pepper flakes. Consider adding pineapple chunks, avocado, or nuts for extra flavor.
