Chinese-Inspired Chicken Salad

A refreshing and vibrant salad packed with fresh veggies, tender chicken, and a zesty dressing that brings it all together.

Ingredients

  • 3 cups thinly sliced Napa or green cabbage
  • 1 cup thinly sliced red cabbage
  • 1 cup shredded carrots
  • 1 cup sugar snap peas, thinly sliced
  • 3 green onions, thinly sliced
  • 2 ½ cups cooked, shredded chicken
  • 1 cup orange segments
  • 1 cup fresh cilantro leaves, roughly chopped
  • ⅓ cup slivered or sliced almonds, toasted
  • Optional: Black or white sesame seeds for garnish

Dressing:

  • ¼ cup unseasoned rice vinegar
  • 3 tablespoons toasted sesame oil
  • 3 tablespoons coconut aminos
  • 2 tablespoons avocado oil or extra-virgin olive oil
  • ½ teaspoon ground ginger
  • ¼ teaspoon garlic powder

Instructions

  1. Prep the Veggies: Wash and prepare all fresh veggies. Thinly slice the Napa or green cabbage and red cabbage. Shred the carrots and thinly slice the sugar snap peas.
  2. Ready the Chicken: If using rotisserie chicken, shred while it’s warm. Season if cooking your own.
  3. Make the Dressing: Whisk together rice vinegar, sesame oil, coconut aminos, avocado oil, ground ginger, and garlic powder.
  4. Combine Everything: In a large bowl, add the prepped veggies, chicken, orange segments, and cilantro.
  5. Dress It Up: Drizzle dressing over the salad and toss gently.
  6. Serve It Right: Toss in toasted almonds and let sit for 10-15 minutes before serving.

Notes

For extra flavor, let the salad sit before serving. Customize with additional fruits or proteins as desired.
