Chicken Strawberry Salad Bowls

A refreshing salad that combines juicy grilled chicken, sweet strawberries, crispy bacon, and crunchy romaine, all topped with a light dressing—a perfect summer meal!

  • 4 small boneless, skinless chicken breasts
  • 1 Tbsp avocado oil (or olive oil)
  • 4 thin slices of nitrate-free bacon (cooked and crumbled)
  • 1 large head romaine lettuce (finely chopped)
  • 2 cups fresh strawberries (chopped)
  • 1 small red onion (sliced)
  • 1/2 cup crumbled cheese (parmesan, cotija, feta, or goat cheese)
  • 1 large avocado (sliced and squeezed with fresh lemon juice)
  • Sea salt and fresh ground black pepper (to taste)

Instructions

  1. Prep the chicken by seasoning it with salt, pepper, and avocado oil.
  2. Grill the chicken on medium-high heat for about 5-7 minutes per side until cooked through.
  3. Cook the bacon in a separate pan until crispy, then crumble it.
  4. Chop the romaine lettuce and slice the onion, then place in a large salad bowl.
  5. Prepare the strawberries and avocado, adding them to the salad bowl.
  6. Combine everything by adding the sliced chicken, crumbled bacon, and cheese, and gently toss together.
  7. Dress the salad with vinaigrette or drizzle with avocado oil and lemon juice, then season with salt and pepper.

Notes

Serve in wide, shallow bowls and garnish with extra cheese and strawberries. This salad can be prepped in advance, just keep the dressing separate.
