Chicken, Strawberry, Avocado, and Spinach Salad

A vibrant and refreshing salad with succulent chicken, juicy strawberries, and creamy avocado, perfect for any meal.

  • 2 chicken breasts (boneless, skinless)
  • 1/2 cup fresh lemon juice
  • 1/2 tsp onion powder
  • 2 tsp dried parsley
  • 2 tsp paprika
  • 6 cups fresh spinach
  • 6 to 8 large strawberries (sliced)
  • 1/2 red onion (thinly sliced)
  • 1 avocado (peeled, and cut into chunks)
  • 1/4 cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp fresh tarragon (minced)
  • Sea salt and freshly ground black pepper

Instructions

  1. Prep the chicken by patting dry and seasoning with salt, pepper, paprika, and onion powder. Let it rest for about 10 minutes.
  2. Cook the chicken using your preferred method until cooked through (about 6-7 mins per side on skillet or 20-25 mins in oven).
  3. Make the dressing by whisking together lemon juice, balsamic vinegar, tarragon, and salt, then gradually adding the olive oil.
  4. Assemble the salad by combining spinach, strawberries, red onion, avocado, and sliced chicken. Drizzle with dressing and toss gently.
  5. Plating it up: Transfer the salad to a serving platter or bowls, adding extra dressing or herbs if desired.

Notes

This salad can be made ahead of time; just keep greens and avocado separate until serving to prevent sogginess.
