Cherry Brownies

Indulge in the rich, fudgy goodness of Cherry Brownies with sweet tangy cherries for a delightful treat.

  • 4 ounces bittersweet chocolate (chopped)
  • 3/4 cup salted butter (cubed)
  • 1/2 cup natural unsweetened cocoa powder
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) brown sugar
  • 3 large eggs (room temperature)
  • 2 teaspoons vanilla extract
  • 3/4 cup (106g) all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup semisweet chocolate chips
  • 1 cup halved fresh cherries (stems and pits removed)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your baking pan by lining it with parchment paper and spraying with non-stick cooking spray.
  3. Melt the chopped chocolate and cubed butter in a medium saucepan over low heat until smooth.
  4. Mix in the granulated sugar, brown sugar, and eggs in a separate bowl until well combined.
  5. Pour the slightly cooled chocolate-butter mixture into the sugar mixture and stir until combined.
  6. Add in the vanilla extract.
  7. Incorporate the cocoa powder, flour, and salt, folding gently until just combined.
  8. Stir in the chocolate chips and halved cherries until evenly distributed.
  9. Pour the brownie batter into the prepared pan and spread evenly.
  10. Bake for 25-30 minutes, or until a toothpick comes out with a few moist crumbs.
  11. Cool the brownies in the pan for at least 15 minutes before lifting them out and transferring to a wire rack to cool completely.

Notes

Serve warm with vanilla ice cream, whipped cream, or a sprinkle of powdered sugar for added elegance. Store leftovers in an airtight container.
